A Summertime Recipe from ‘365 Nature’

Last week we spoke to Anna Carlile about her book, 365 Nature. This week, we feature a recipe from 365 Nature that’s destined to become a summertime staple. For this project Anna collaborated with Melbourne-based Jessica Thompson of the PALATE Journal to showcase summer fruits in a salad that says KAPOW to the taste buds and the eyes! We are excited to share this extract from 365 Nature below.

Heirloom tomato and peach salad

This pretty salad’s bright colour is matched by an explosion of flavour, thanks to a tarty variety of heirloom tomatoes; the perfect match for the sweet peaches. Say hello to lolly-like red cherry, fragrant orange beefsteak, dainty yellow pear, bold and juicy black Russian, and tangy and striking green zebra tomatoes.

Serves 4


  • 1 shallot, finely sliced
  • 60 ml (1/4 cup/2 fl oz) verjuice
  • 400 g (1 3/4/14 oz) mixed variety heirloom tomatoes, sliced
  • 2 peaches, sliced into wedges
  • 1/2 bunch of basil leaves, torn


  • 60 ml (1/4 cup/2 fl oz) verjuice
  • 1 tablespoon extra virgin olive oil
  • salt + pepper


1. Combine sliced shallot and 60 ml verjuice in a small bowl and set aside for 20 minutes to soften the flavour of the shallot. Drain, discarding the verjuice, and pat the shallots dry with paper towel.

2. Combine your mix of tomatoes peaches, basil and soaked shallots in a bowl.


1. Whisk together 60 ml verjuice with olive oil and salt and pepper to taste Add to tomato mixture and toss gently to combine.

To serve

This salad could be served with some baked ricotta as an elegant appetiser, and try the leftovers as a bruschetta topping, on top of toasted bread spread with goats cheese. Best served fresh.
